- 1 1/2 pounds jumbo shrimp, cooked, peeled and deveined
- 2 teaspoon chili powder
- 2 teaspoon ground cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 lime, juiced
- 1 teaspoon oil
- 8 corn tortillas
- 2 cups shredded green cabbage
- 2 cups shredded purple cabbage
- 1 cup grated carrot
- 1/4 cup finely diced fresh cilantro
- 2 tablespoons olive oil
- 1 lime, juiced
- 1 tablespoon honey
- 1/4 teaspoon salt
- Freshly ground pepper
- Avocado
- Cheese
- Additional cilantro
- Lime wedges
Instructions
- Step: Pat the shrimp dry with paper towels.
- Step: Toss the shrimp in a medium bowl with the chili powder, cumin, onion powder, garlic powder, cayenne pepper, salt, and juice of half a lime until well coated.
- Step: Heat oil in a large skillet over medium-high heat. Add the shrimp to the hot pan and saute for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
- Step: In a large bowl, mix together the shredded green and purple cabbage, grated carrot, cilantro, olive oil, lime juice, honey, salt, and pepper until combined.
- Step: Serve on warm corn tortillas. To assemble, layer some mashed avocado, shrimp, and slaw. Garnish with cheese, fresh cilantro, and lime juice if desired.
Notes
Keep an eye on the shrimp to avoid overcooking, which can make it rubbery. You can use pre-shredded cabbage to save time. Store the shrimp and slaw separately in the refrigerator for up to 3-4 days.
