Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup (250 g) bang bang sauce
  • 2 tablespoons sesame oil
  • 4 large eggs, beaten
  • ½ teaspoon kosher salt
  • 2 large carrots, diced
  • 1 large white onion, diced
  • ¼ cup green onions, diced
  • 1 teaspoon garlic, minced
  • 4 cups long-grain white rice, cooked and cooled
  • ¼ cup (57 g) unsalted butter, melted
  • 1 teaspoon lemon juice
  • 2 tablespoons soy sauce
  • ⅓ cup (45 g) frozen peas

Instructions

  1. Step: Toss the cubed chicken with oil, paprika, garlic powder, salt, and pepper until evenly coated.
  2. Step: Air fry chicken at 400°F for 11–12 minutes, flipping halfway through, until golden and cooked through.
  3. Step: Heat 1 tablespoon sesame oil in a large skillet over high heat, scramble the beaten eggs with salt until set, and set aside.
  4. Step: Reduce heat to medium-high, add remaining sesame oil, carrots, onion, and green onions, and cook for 5 minutes.
  5. Step: Stir in garlic and cook for 1 more minute.
  6. Step: Add the cooled rice to the skillet, break it up, and stir for 2–3 minutes until heated through.
  7. Step: Add scrambled eggs, melted butter, lemon juice, soy sauce, and peas; stir and cook for 2–3 more minutes.
  8. Step: Toss the cooked chicken with ½ cup Bang Bang Sauce.
  9. Step: Top the fried rice with the bang bang chicken and drizzle with additional Bang Bang Sauce.

Notes

Day-old cooked rice is recommended to prevent mushiness. Chicken can also be pan-fried in a skillet for 6-8 minutes instead of air frying.
