Description

This Strawberry Spinach Salad with Homemade Balsamic Vinaigrette Dressing comes together in no time for a fresh and flavorful side salad or light dinner.


Ingredients

  • 16 ounces Fresh Spinach + Mixed Greens
  • 16 ounces Fresh Strawberries – stems removed (sliced)
  • 1/2 Cup Crumbled Cheese (goat cheese, gorgonzola, blue cheese or feta)
  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Olive Oil
  • 1/3 Cup Balsamic Vinegar
  • 2 teaspoons Maple Syrup
  • 1 teaspoon Dijon Mustard
  • Salt/Pepper – to taste

Instructions

  1. Step 1: Whisk together oil, vinegar, maple syrup, mustard, salt and pepper until fully combined.
  2. Step 2: Combine spinach, salad greens, sliced strawberries, cheese and pecans. Toss with dressing and serve or if you prefer plate salads and serve dressing on the side.

Notes

Keep components separate if preparing ahead of time. Ensure spinach is completely dry to prevent wilting.
