Description

These zesty street corn salmon tacos feature pan-seared spiced salmon paired with fresh charred corn, a tangy yogurt-lime sauce, and crumbled cotija cheese for a perfect weeknight dinner.

  • 1/2 cup plain greek yogurt
  • Juice of 1 medium lime
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 1 tsp hot sauce
  • 2 ears of corn, shucked
  • 2 tbsp olive oil, divided
  • 1 jalapeño, seeds removed and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lb center cut salmon, cut into bite-sized cubes
  • 2 tsp brown sugar
  • 1/2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 pinch black pepper
  • Flour tortillas
  • Crumbled cotija cheese

Instructions

  1. Step: Combine yogurt, lime juice, chili powder, salt, paprika, cumin, and hot sauce in a small bowl. Refrigerate until ready to use.
  2. Step: Heat 1 tbsp olive oil in a skillet over medium-high heat. Add corn and cook for 4-5 minutes until lightly charred. Remove to a bowl.
  3. Step: Mix the cooked corn with the chopped jalapeño and cilantro.
  4. Step: Toss salmon cubes with brown sugar, smoked paprika, cumin, chili powder, garlic powder, salt, and pepper.
  5. Step: Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add salmon in a single layer and cook for about 8 minutes, turning occasionally until cooked through.
  6. Step: Warm your tortillas.
  7. Step: Assemble tacos by adding salmon to tortillas, topping with the corn mixture, a drizzle of sauce, and crumbled cotija cheese.

Notes

Ensure the salmon is patted dry before tossing with spices for a better sear. Sour cream can be substituted for Greek yogurt if preferred.
