- 6 large green bell peppers
- 1 lb ground beef
- 1 cup cooked white rice
- 1/2 cup yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1/2 cup crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1 tbsp olive oil
- 1/2 cup shredded mozzarella cheese (microbial-rennet)
- 1/4 cup grated Parmesan cheese (microbial-rennet)
- 1/2 cup water
Instructions
- Prepare Peppers: Wash peppers, remove tops and seeds, and arrange upright in a baking dish.
- Brown Meat: Cook onion in olive oil until soft, add garlic, then brown ground beef.
- Simmer Sauce: Stir in tomato paste, tomato sauce, crushed tomatoes, and seasonings and simmer briefly.
- Combine: Mix cooked rice into beef mixture until evenly combined.
- Stuff: Stuff peppers with filling and top with mozzarella and Parmesan.
- Prep for Oven: Add water to the baking dish and cover tightly with foil.
- Bake: Bake at 375 degrees F until peppers are tender, then uncover and finish baking.
- Rest: Rest briefly before serving.
Notes
For a lighter version, ground turkey can be used as a substitute for beef. Use large, thick-walled peppers to ensure they hold their shape during baking.
