  • 1 small yellow onion, chopped

  • 1 tablespoon apple cider vinegar
  • 1 cup baby spinach
  • 1 tablespoon olive oil for finishing

Instructions

  1. Step: Preheat oven to 425 degrees Fahrenheit and line a baking sheet.
  2. Step: Toss sweet potatoes with olive oil, salt, pepper, paprika, and cumin.
  3. Step: Roast 25 to 30 minutes, stirring once, until tender and caramelized.
