  • Salt and black pepper to taste
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup red onion, finely diced
  • 1 jalapeño, seeds removed and finely minced
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 46 large burrito-sized flour or low-carb tortillas
  • 1 cup shredded Monterey Jack or cheddar cheese

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). In a bowl, toss the diced sweet potato with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper until well coated.
  2. Step 2: Spread the sweet potato cubes in a single layer on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  3. Step 3: In a mixing bowl, combine the rinsed black beans, diced red onion, minced jalapeño, lime juice, and chopped cilantro. Stir gently to maintain bean texture.
  4. Step 4: Once roasted, let the sweet potatoes cool slightly before adding them to the bean mixture, or keep them separate for assembly.
  5. Step 5: Warm the tortillas. Lay each flat and place a line of shredded cheese in the center, followed by a portion of the sweet potato and bean mixture.
  6. Step 6: Fold in the sides of the tortilla, lift the bottom edge, and roll tightly into a sealed package, placing seam-side down.
  7. Step 7: Heat a dry skillet over medium heat and toast the burritos seam-side down for 2-3 minutes per side until golden brown and crispy.
