- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup red onion, finely diced
- 1 jalapeño, seeds removed and finely minced
- 1 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
- 4–6 large burrito-sized flour or low-carb tortillas
- 1 cup shredded Monterey Jack or cheddar cheese
Instructions
- Step 1: Preheat your oven to 400°F (200°C). In a bowl, toss the diced sweet potato with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper until well coated.
- Step 2: Spread the sweet potato cubes in a single layer on a baking sheet and roast for 20-25 minutes until tender and caramelized.
- Step 3: In a mixing bowl, combine the rinsed black beans, diced red onion, minced jalapeño, lime juice, and chopped cilantro. Stir gently to maintain bean texture.
- Step 4: Once roasted, let the sweet potatoes cool slightly before adding them to the bean mixture, or keep them separate for assembly.
- Step 5: Warm the tortillas. Lay each flat and place a line of shredded cheese in the center, followed by a portion of the sweet potato and bean mixture.
- Step 6: Fold in the sides of the tortilla, lift the bottom edge, and roll tightly into a sealed package, placing seam-side down.
- Step 7: Heat a dry skillet over medium heat and toast the burritos seam-side down for 2-3 minutes per side until golden brown and crispy.
Notes
Store assembled burritos wrapped tightly in foil or parchment for up to 3 days in the fridge or up to 3 months in the freezer. Reheat in an oven or air fryer at 375°F until crispy and hot.
