Description

This sweet potato nachos recipe provides a healthy and satisfying alternative to traditional nachos, featuring crispy-edged sweet potato (chips) and a vibrant chili lime orange flavor. It’s a perfect no-fuss meal for busy weeknights, offering great taste with minimal cleanup.

Ingredients

Scale
  • 2 large sweet potatoes (about 900g), peeled and cut into 0.5-inch thick rounds or wedges
  • 1 Tbsp olive oil (15ml)
  • 0.5 tsp chili powder (2.5g)
  • 0.25 tsp cumin (1.25g)
  • 0.25 tsp garlic powder (1.25g)
  • 0.5 tsp salt (2.5g)
  • 0.25 cup fresh orange juice (60ml)
  • 1 Tbsp lime juice (15ml)
  • 1 lb ground turkey or chicken (450g), 93% lean (or 1 can black beans, drained and rinsed)
  • 1 cup shredded cheddar cheese (110g), or a Mexican blend (or dairy-free shred)
  • 0.5 cup salsa (120g)
  • 0.25 cup chopped fresh cilantro (about 10g)
  • Optional: 0.5 avocado, diced
  • Optional: Greek yogurt (or sour cream) for serving

Instructions

  1. Prep Sweet Potatoes: Preheat oven to 400°F (200°C). Line a large sheet pan. Toss sweet potato rounds with olive oil, chili powder, cumin, garlic powder, and salt until coated. Spread in a single layer.
  2. Roast First Round: Bake for 15-20 minutes, flipping halfway. Sweet potatoes should be tender-crisp at edges, starting to caramelize.
  3. Prepare Toppings: While sweet potatoes roast, brown ground turkey or chicken in a skillet (8-10 minutes) until no pink. Drain fat. Stir in orange and lime juices. Chop avocado and cilantro; have salsa ready.
  4. Assemble Nachos: Remove the sheet pan from the oven. Arrange roasted sweet potatoes evenly. Sprinkle cooked protein (or black beans) over sweet potatoes, then add shredded cheese.
  5. Final Bake: Return the pan to the oven for 5-10 minutes until the cheese is beautifully melted and bubbly. Watch closely to avoid overbaking.
  6. Serve and Enjoy: Top with fresh salsa and chopped cilantro. For family-style, optionally add diced avocado and Greek yogurt (or sour cream).

Notes

If sweet potatoes brown too fast during roasting, reduce oven heat by 25°F. Utilize seasonal citrus like fresh oranges for the best flavor in your Chili Lime Orange seasoning. Pantry staples like spices and canned beans make assembly quick and convenient. For efficient meat prep, use a 10-inch skillet.
