- 2 medium to large sweet potatoes, peeled or unpeeled
- 1 pound ground turkey or ground beef
- 2 tablespoons olive oil or avocado oil
- 2 tablespoons taco seasoning (store-bought or homemade)
- salt and pepper to taste
- 1 can black beans (optional)
- 1 cup corn (optional)
- 2 cups romaine or shredded lettuce
- 1 cup salsa or pico de gallo
- 1 medium avocado or guacamole
- 1/2 cup Greek yogurt or sour cream
- 1/4 cup fresh cilantro
- 1 medium lime
Instructions
- Roast Sweet Potatoes: Preheat the oven to 425°F (220°C). Cube sweet potatoes into bite-sized pieces. Toss with oil, salt, pepper, and optional chili powder. Spread on a sheet pan and roast for 22 to 30 minutes, flipping once, until tender and browned.
- Cook Taco Meat: Heat a skillet over medium heat with oil. Add the protein and break it up. Once mostly cooked, stir in taco seasoning and a splash of water or broth. Simmer for a few minutes until thickened.
- Assemble Taco Bowl: Divide roasted sweet potatoes into bowls. Top with meat, greens, beans, corn, salsa, and avocado. Drizzle with Greek yogurt or sauce, finish with cilantro and a squeeze of lime.
Notes
Customize your taco bowl with different toppings or proteins. For added crunch, consider radish slices.
