Description

These 10-minute air fryer salmon bites make the perfect easy weeknight meal. The salmon is cubed and marinated in a tasty teriyaki sauce then air-fried until perfectly golden and succulent. It makes a great easy protein to add to rice bowls or wraps.


Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 2 teaspoons cornstarch
  • 4 (5 oz) salmon filets, skin removed
  • Sesame seeds and scallions (optional for serving)

Instructions

  1. Step: Add the soy sauce, maple syrup, sesame oil, rice vinegar, garlic, ginger, and cornstarch into a medium size saucepan and stir it all together. Bring it to a boil on the stovetop, reduce the heat to simmer, and let it simmer for 2-3 minutes, whisking it so it thickens. Remove from heat and let cool.
  2. Step: Cut the salmon filets into even size 1-inch pieces. Place the cut salmon into a medium size bowl, pour 1/2 cup of the teriyaki sauce over the salmon, toss to coat, and let it marinate in the refrigerator for 30 minutes.
  3. Step: Preheat the air fryer to 400° F and spray the basket with non-aerosol cooking spray. Place the salmon bites in the basket in an even layer and cook for 6-8 minutes, flipping halfway through, until golden and tender.
  4. Step: Serve immediately with a sprinkle of sesame seeds and scallions.

Notes

Use good quality salmon with the skin removed. Cut the salmon into even size 1-inch pieces. Marinate for at least 30 minutes in the refrigerator. Flip the salmon bites halfway through cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
