Description

A quick and versatile dinner using beef mince with Thai-inspired flavors. This dish features a savory stir-fry combined with a fresh sweet chilli lime drizzle, served over jasmine rice with a variety of raw or cooked vegetables.


Ingredients

  • 1/3 cup roasted unsalted cashews (or peanuts)
  • 1 tbsp canola oil
  • 500 g beef mince
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely minced
  • 3 tbsp roughly chopped coriander/cilantro leaves
  • 2 tbsp sweet chilli sauce
  • 2 tbsp fish sauce
  • 2 tbsp rice vinegar
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 garlic clove, minced
  • 3 tbsp sweet chilli sauce (for drizzle)
  • 2 tbsp lime juice
  • 2 tsp fish sauce (for drizzle)
  • 2 batches jasmine rice
  • Steamed or fresh vegetables (such as chopped cucumber, coriander, and sliced red onion)

Instructions

  1. Prepare Sauces: Mix the drizzle sauce ingredients in one small bowl and the stir fry sauce ingredients in a separate bowl.
  2. Toast Nuts: Heat a large non-stick pan over medium high heat, toast cashews for 2 minutes, then cool and roughly chop.
  3. Sauté Aromatics: Heat oil in the same pan over high heat; add garlic and onion and cook for 1 minute.
  4. Brown Beef: Add beef mince and cook, breaking it up with a spoon, until no longer raw.
  5. Caramelize: Add the stir fry sauce and cook for 3-4 minutes, stirring until the sauce reduces and caramelizes on the beef.
  6. Assemble: Spoon the beef over steaming jasmine rice and add vegetables to the side.
  7. Finish: Drizzle with the sweet chilli lime sauce and top with chopped cashews and coriander.

Notes

For a no-nut option, use crispy fried shallots. To make it vegetarian, replace beef with crumbled firm tofu. Lean beef is used for the nutrition calculations.
