Description

This is my go-to marinade for chicken! You’ll love the vibrant, savory flavor, as well as how tender and juicy it makes chicken breasts and thighs. Perfect for grilling, baking or air frying!


Ingredients

  • ¼ cup olive oil
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic (minced)
  • 1 teaspoon dried Italian seasoning
  • ¼ teaspoon black pepper
  • 2 pounds chicken breasts or thighs (boneless or bone-in)

Instructions

  1. Make marinade: Combine olive oil, soy sauce, lemon juice, brown sugar, Worcestershire sauce, garlic, Italian seasoning and pepper in a bowl or large zip-top plastic bag. Whisk or squeeze bag to mix.
  2. Prepare chicken: If using boneless, skinless chicken breasts, pound them to an even ½-¾ inch thickness between parchment paper or plastic wrap.
  3. Marinate: Add the chicken to the bag or bowl, coating well. Refrigerate for at least 30 minutes and up to 12 hours.
  4. Discard: Discard used marinade and cook chicken using desired method (grill, oven, stove, or air fryer) until internal temperature reaches 165° F.
  5. Grill: Clean and oil grill grates; heat to medium-high (375-450° F). Grill 5-8 minutes per side for breasts (7-10 for thighs).
  6. Oven: Preheat to 425° F. Bake breasts for 13-26 minutes depending on size, or thighs for 20-30 minutes, until internal temperature reaches 165° F.
  7. Stove: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook breasts 5-8 minutes per side (8-10 for thighs) until cooked through.
  8. Air Fryer: Cook at 400° F for 8 minutes, flip, and cook 5-12 additional minutes until internal temperature reaches 165° F.
  9. Rest: Let chicken rest for 5 minutes before serving.

Notes

If using bone-in chicken thighs, add a few minutes to the cook time. You can freeze the chicken and marinade together for up to 3 months; thaw in the refrigerator for 24 hours before cooking.
