Ingredients

Scale
  • 3 cups short grain sushi rice
  • 2 tbsp sesame seeds
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 pound shrimp
  • 1 tbsp toasted sesame oil
  • ½ tsp garlic powder
  • ¼ tsp ginger powder
  • 1 tbsp low sodium soy sauce
  • ⅓ cup mayonnaise
  • 1 ½ tsp sriracha
  • 1 scallion (sliced)
  • 2 jalapeños (sliced)
  • 1 cup edamame (shelled)
  • 1 red bell pepper (sliced)
  • 1 cucumber (sliced)
  • 1 avocado (sliced)
  • A pinch of Japanese Multi-Purpose Seasoning (optional)
  • Low Sodium Soy Sauce (optional)
  • Sushi Ginger (optional)

Instructions

  1. Rice Prep: Cook your short grain rice according to the package instructions.
  2. Toast Sesame: Toast sesame seeds in a skillet over medium-low heat for 5-10 minutes until golden, then stir into the cooked rice.
  3. Season Rice: Microwave rice vinegar, sugar, and salt in 30-second intervals until dissolved, then fold into the rice.
  4. Marinate Shrimp: Peel, devein, and pat shrimp dry, then marinate in garlic powder, ginger powder, and soy sauce for 10 minutes.
  5. Cook Shrimp: Heat toasted sesame oil in a skillet over medium heat and cook shrimp for about 5 minutes until opaque and curled.
  6. Spicy Mayo: Whisk together the mayonnaise and sriracha in a small bowl.
  7. Prep Toppings: Slice the scallion, jalapeños, red pepper, cucumber, and avocado; ensure edamame is shelled.
  8. Assemble: Serve rice topped with shrimp and vegetables, drizzled with spicy mayo, and optional soy sauce and sushi ginger.

Notes

Toasting the sesame seeds for the rice helps build extra flavor. You can swap the shrimp out for any of your favorite proteins, such as tofu or plant-based alternatives. If you do not like spice, omit the sriracha and jalapeños.
