  • 2 cups (140g) pale green cabbage (shredded)
  • 1 medium (120g) orange carrot (thinly julienned)
  • 3 whole scallions (chopped into crisp green slices)
  • 2 cloves garlic (minced)
  • 1 tsp (5g) ginger (freshly grated)
  • 2 tbsp (30ml) dark soy sauce
  • 1 tbsp (15ml) light soy sauce
  • 1 tbsp (15ml) oyster sauce
  • 1 tsp (5g) cornstarch
  • 3 tbsp (45ml) neutral oil (divided)

Instructions

  1. Step: In a small bowl, toss the chicken breast strips with a splash of light soy sauce and a pinch of cornstarch; let rest for 10 minutes.
  2. Step: Heat 1 tbsp of neutral oil in a wok over high heat and sear chicken strips undisturbed for 60 seconds until caramelized; toss briefly, then remove.
  3. Step: Wipe the wok clean, add 1.5 tbsp of oil, and add the dried egg noodles in an even layer; pan-fry undisturbed for 2-3 minutes until crispy, then flip and remove.
  4. Step: Add remaining oil, fry garlic and ginger for 15 seconds, then stir-fry carrots and cabbage until wilted but crisp.
  5. Step: Return chicken and noodles to the wok, pour in the mixed dark soy glaze, and toss rapidly with tongs until the sauce clings tightly.
  6. Step: Garnish with fresh scallions and serve immediately.
