Description

Crockpot Lasagna is layers of hearty meat sauce, a creamy ricotta mixture, tender lasagna noodles, and plenty of cheese. This is a comforting, crowd-pleasing slow cooker pasta recipe.


Ingredients

  • 32 oz whole milk ricotta cheese
  • 2 eggs
  • 8 oz mozzarella cheese (for mixture)
  • 4 oz grated Parmesan cheese
  • 2 tbs fresh or dried parsley
  • 2 (28 oz) cans crushed tomatoes
  • 1 (28 oz) can diced tomatoes
  • 1 pound bulk ground turkey or beef (seasoned with Italian herbs)
  • 1 pound ground beef
  • 1 clove chopped garlic
  • 1 cup alcohol-free vegetable broth
  • 1 tsp thyme
  • 1 tsp dried rosemary
  • 1 tsp basil
  • 1 tsp oregano
  • 1 pound cooked lasagna pasta
  • 16 oz mozzarella cheese (shredded, for topping)

Instructions

  1. Step: Prepare the meat sauce by browning the beef and ground turkey/beef in a pan until cooked through and crumbled.
  2. Step: Add garlic, crushed tomatoes, diced tomatoes, vegetable broth, and all spices to the meat, bringing to a low boil, then simmering for 1 hour.
  3. Step: Cook the pasta noodles according to box instructions until al dente, drain, and set aside.
  4. Step: In a large mixing bowl, combine ricotta, 8 oz mozzarella, parmesan, parsley, and eggs.
  5. Step: Begin layering in the crockpot by starting with a layer of meat sauce, followed by noodles, then the cheese mixture, and repeating until ingredients are used, ending with meat sauce on top.
  6. Step: Cook on high for 4 hours or on low for 8 hours.
  7. Step: Sprinkle the remaining 16 oz of mozzarella cheese on top during the final hour of cooking.

Notes

If you prefer, you may use no-boil pasta; however, pre-cooking the noodles helps prevent the dish from becoming watery during the long slow-cook process. Leftovers can be stored in the refrigerator for up to three days or frozen for up to three months.
