Tropical Grilled Chicken and Pineapple

Description

Juicy chicken marinated in a tangy sauce paired with sweet grilled pineapple for a tropical flavor experience.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 small fresh pineapple (or 1 can of pineapple rings)
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Marinate the chicken: In a bowl, whisk together the soy sauce, honey, garlic, ginger, and lime juice. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes, preferably a few hours.
  2. Prepare the pineapple: If using fresh pineapple, peel, core, and cut it into thick slices. If you’re using canned pineapple, just drain the rings and pat them dry with paper towels.
  3. Preheat the grill: Heat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Grill the chicken: Remove the chicken from the marinade (discard the marinade) and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Grill the pineapple: Add the pineapple slices to the grill during the last 5 minutes of cooking, grilling them until they have nice grill marks and are caramelized, about 2-3 minutes per side.
  6. Rest and serve: Allow the chicken to rest for a few minutes post-grilling, then serve it alongside the grilled pineapple.

Notes

For deeper flavor, consider marinating the chicken overnight. A meat thermometer ensures the chicken is perfectly cooked.
