- 4 boneless, skinless chicken breasts
- 1 small fresh pineapple (or 1 can of pineapple rings)
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
- Juice of 1 lime
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Marinate the chicken: In a bowl, whisk together the soy sauce, honey, garlic, ginger, and lime juice. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes, preferably a few hours.
- Prepare the pineapple: If using fresh pineapple, peel, core, and cut it into thick slices. If you’re using canned pineapple, just drain the rings and pat them dry with paper towels.
- Preheat the grill: Heat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Grill the chicken: Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Grill the pineapple: Add the pineapple slices to the grill during the last 5 minutes of cooking, grilling them until they have nice grill marks and are caramelized, about 2-3 minutes per side.
- Rest and serve: Allow the chicken to rest for a few minutes post-grilling, then serve it alongside the grilled pineapple.
Notes
For deeper flavor, consider marinating the chicken overnight. A meat thermometer ensures the chicken is perfectly cooked.
