Yogurt-Marinated Indian-Inspired Chicken Thighs

Description

A super-easy, super-fast, super-flavorful entree. Boneless, skinless chicken thighs are marinated in yogurt and a blend of Indian-inspired spices, and then broiled or grilled to perfection!


Ingredients

  • 1 cup nonfat plain yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon curry powder
  • 1 tablespoon chili powder
  • ½ tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 8 boneless, skinless chicken thighs (about 2 pounds total)
  • chopped fresh cilantro, for garnish

Instructions

  1. Step: In a large mixing bowl, combine yogurt, oil, curry powder, chili powder, cumin, garlic powder, onion powder, and salt; mix to combine.
  2. Step: Add chicken thighs and toss until well-coated.
  3. Step: Cover and marinate for at least 30 minutes, or refrigerate for up to 8 hours.
  4. Step: Remove chicken from fridge and let stand for 15 minutes at room temperature.
  5. Step: Oven Method: Set oven to BROIL. Transfer chicken to a broiler pan or foil-lined baking sheet. Discard excess marinade. Broil for 8 minutes; flip chicken thighs and broil 7 to 8 minutes more, or until internal temperature reaches 165°F.
  6. Step: Grill Method: Preheat grill to medium-high (425°F to 450°F). Brush grates with oil. Place chicken on grill and cook for about 7 minutes per side, or until internal temperature reaches 165°F.
  7. Step: Garnish with cilantro and serve.

Notes

If using bone-in chicken thighs, adjust cooking time to 25 to 28 minutes, flipping halfway through. Let chicken stand for 15 minutes at room temperature before cooking for better texture.
