Description

An easy shrimp salad recipe that tastes just like ceviche but without all the work! It’s light and refreshing, packed with flavor and the perfect salad for summer too!


Ingredients

Scale
  • 1 lbs. frozen precooked shrimp (thawed, tails taken off & cut into thirds)
  • 12 avocados, diced
  • ½ cup cherry tomatoes, halved or quartered
  • ¼ cup red onion, finely chopped
  • ¼ cup cilantro, chopped
  • 3 limes, juiced
  • Salt and pepper, to taste

Instructions

  1. Combine: Add your chopped shrimp, avocados, tomatoes, red onion and cilantro to a large bowl and season with salt and pepper.
  2. Mix: Add your lime juice and toss the salad until it’s fully coated.
  3. Serve: Place your salad in the fridge to chill or serve it immediately with your favorite chips.

Notes

If prepping this salad for later: Keep your avocado separate from the rest of your ingredients and add it right before serving.
