Description
These Grilled Cilantro Lime Chicken Thighs are incredibly juicy and flavorful. The easy chicken marinade is quick to throw together and the tender chicken is so zesty and fresh that you will want to make this all year long!
Ingredients

- 3 lbs. boneless skinless chicken thighs
- 1/2 cup fresh cilantro leaves (chopped)
- 4 garlic cloves (minced)
- 1/4 cup olive oil
- 2 limes (juice and zest)
- 1 Tablespoon honey
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon freshly ground black pepper
Instructions
- Step 1: In a medium bowl, combine the cilantro, garlic, olive oil, lime juice, honey, chili powder, salt, cumin, and black pepper, removing two tablespoons of the marinade to reserve for later.
- Step 2: In a large Ziploc bag, combine the chicken and the remaining marinade, seal and squish to coat evenly, then refrigerate for 2 to 10 hours.
- Step 3: Heat a grill to medium-high heat, remove the chicken from the marinade, discard the marinade, and grill for 5-6 minutes on each side until the internal temperature reaches 165°F.
- Step 4: Remove chicken from grill, drizzle with the reserved marinade, and let the chicken rest for 5-10 minutes before serving.
Notes
If you prefer, you could add all the marinade ingredients to a food processor and blend for 1 minute to create a slightly different marinade, then proceed as normal.
