I love making these Lemon Pepper Chicken Bites when I’m in need of an easy healthy dinner. This healthy dish is full of flavor and takes only 25 minutes to make.

- 1 – 1 1/4 lbs. chicken breasts, cut into 1 inch pieces
- 2 tablespoons flour
- 2 tablespoons olive oil
- 1 tablespoon butter, cut into pieces
- 1 garlic clove, minced
- 1 teaspoon pepper
- 3 tablespoons lemon juice
- 2 tablespoons finely chopped fresh parsley (optional)
- 1/2 teaspoon salt
Instructions
- Step: Cut chicken into 1 inch pieces and dry them with a paper towel.
- Step: Add chicken, salt, and flour to a medium sized bowl and toss until evenly coated.
- Step: Heat a 12 inch skillet over medium-high heat with olive oil.
- Step: Once the oil is hot, add chicken in a single layer, ensuring some space between pieces.
- Step: Brown the chicken for 4 minutes, flip, and cook for 3 more minutes until cooked through.
- Step: Add butter, garlic, pepper, and lemon juice to the pan.
- Step: Toss together and cook for 1-2 minutes until most of the liquid has evaporated and a sauce has formed.
- Step: Serve immediately.
Notes
Ensure chicken pieces are cut uniformly so they cook at the same rate. If using more than 1.25 lbs, cook in two separate batches to avoid overcrowding the pan.
