  • 600750 g (1.21.5 lbs) Chicken breasts or boneless thighs
  • Zest from 1 lime
  • 4 tbsp Lime juice
  • 2 Garlic cloves, minced
  • 3 tbsp Brown sugar
  • 1/4 tsp Pepper
  • 1 tbsp Olive oil
  • 2 tbsp finely chopped Cilantro (optional)
  • 2 tbsp soy sauce
  • 12 tbsp Olive oil (for cooking)

Instructions

  1. Prepare the Chicken: Pound the thick part of each chicken breast with your fist or a rolling pin until it is about 1.7 cm (2/3 inch) thick. Skip this step if using chicken thighs.
  2. Marinate: Combine the chicken and marinade ingredients in a ziplock bag. Seal and squeeze to mix. Refrigerate for at least 12 hours, up to 48 hours.
  3. Cook (Pan): Heat 1-2 tablespoons of olive oil in a large pan over medium-high heat. Cook the chicken for about 3 minutes on each side until caramelized and golden brown.
  4. Cook (Grill): Brush oil on the grill and preheat to medium-high. Grill the chicken for about 3 minutes on each side until caramelized.
  5. Cook (Oven): Preheat oven to 425°F (220°C). Bake the chicken for 15 minutes, then turn on the broiler to high and grill for another 3 minutes to caramelize the surface.
  6. Rest: Place cooked chicken on a plate, cover loosely with foil, and let rest for 3 minutes before serving.

Notes

Soy sauce is used for a salty punch and depth. You can prepare this ahead of time by freezing the chicken in the marinade; simply defrost in the fridge overnight. Adding finely chopped fresh chili or chili paste to the marinade is a great way to add an extra kick.
