This Mexican Pasta Salad is a simple and easy recipe. It’s an authentic and flavorful pasta dish that comes together in minutes.

- 2 cups dried small macaroni noodles
- 1/4 cup + 1 tablespoon mayonnaise
- 1/4 cup + 1 tablespoon Mexican sour cream or crème Fraiche
- 1 pinch salt
- 1 pinch ground black pepper
- 6 oz sliced smoked turkey breast
- 15 oz can mixed vegetable mix, drained
- Pickled jalapenos, drained and chopped (optional)
Instructions
- Step 1: Cook the pasta according to the directions on the package, drain, and set aside to cool to room temperature.
- Step 2: In a large mixing bowl, combine the mayonnaise, sour cream, salt, and pepper.
- Step 3: Mix in the cooked pasta and stir until the sauce is coating the noodles as thoroughly as possible.
- Step 4: Add in the drained canned vegetables and the chopped jalapenos.
- Step 5: Mix in the sliced smoked turkey breast and stir until all ingredients are well mixed.
- Step 6: Serve immediately or store in the fridge for at least 30 minutes before serving to allow it to cool.
Notes
This salad tastes even better if allowed to set in the fridge for a few hours or overnight. You can speed up the cooling of the pasta by rinsing it under cool water before draining.
