Pepper Jack Pasta Salad – seriously DELICIOUS! So simple, yet so amazing! Macaroni, pepper jack cheese, red bell pepper, green bell pepper, celery, green onions, mayonnaise, salt and pepper. Can make ahead and refrigerate until ready to eat. Perfect for summer potluck! Such an easy side dish recipe!


Ingredients

  • 8 oz elbow macaroni, cooked and cooled
  • 8 oz pepper jack cheese, cubed
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 1 cup diced celery
  • ½ cup sliced green onions
  • 1 cup mayonnaise
  • salt and pepper, to taste

Instructions

  1. Step 1: Combine all ingredients in a large bowl.
  2. Step 2: Cover and chill before serving.

Notes

Can make pasta salad the night before and refrigerate until serving. Leftover pasta salad will keep 5 to 7 days in the refrigerator.
