  • 1 cup Dill Pickles
  • 1 tablespoon Fresh Dill
  • 1/2 cup White Onion
  • 1 cup Colby Jack Cheese
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/3 cup Dill Pickle Brine
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions

  1. Step 1: Dice the Colby Jack cheese into small cubes, mince the white onion finely, and chop the dill pickles into bite-sized pieces. Measure out the fresh dill.
  2. Step 2: In a large pot, bring salted water to a rolling boil. Add rotini pasta and cook for about 7-8 minutes until al dente.
  3. Step 3: Drain the pasta and rinse under cool water for about 30 seconds.
  4. Step 4: Mix in 1/3 cup of dill pickle brine into the warm pasta.
  5. Step 5: In a separate bowl, combine mayonnaise, sour cream, and the remaining dill pickle brine. Whisk until smooth.
