- 8 ounces Rotini Pasta
- 1 cup Dill Pickles
- 1 tablespoon Fresh Dill
- 1/2 cup White Onion
- 1 cup Colby Jack Cheese
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 1/3 cup Dill Pickle Brine
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Instructions
- Step 1: Dice the Colby Jack cheese into small cubes, mince the white onion finely, and chop the dill pickles into bite-sized pieces. Measure out the fresh dill.
- Step 2: In a large pot, bring salted water to a rolling boil. Add rotini pasta and cook for about 7-8 minutes until al dente.
- Step 3: Drain the pasta and rinse under cool water for about 30 seconds.
- Step 4: Mix in 1/3 cup of dill pickle brine into the warm pasta.
- Step 5: In a separate bowl, combine mayonnaise, sour cream, and the remaining dill pickle brine. Whisk until smooth.
- Step 6: Fold in chopped dill pickles, diced cheese, and minced onion into the brined pasta. Pour the creamy dressing over and mix gently.
- Step 7: Cover with plastic wrap and refrigerate for at least 1-2 hours.
