- 2 tablespoons olive oil
- 1 cup carrots, peeled and sliced thin
- 1 cup celery, sliced thin
- 1 cup sweet Vidalia or yellow onion, peeled and diced small
- 2 garlic cloves, minced
- 64 ounces low-sodium chicken broth
- 2 bay leaves
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon dried oregano
- 1 teaspoon pepper
- 12 ounces wide egg noodles
- 2 cups shredded cooked chicken
- 3 to 4 tablespoons fresh flat-leaf parsley leaves, finely chopped
- 1 tablespoon lemon juice (optional)
- salt, to taste
- black pepper, to taste
Instructions
- Sauté: Heat olive oil in a large Dutch oven or stockpot over medium-high heat, then sauté carrots, celery, and onion for about 7 minutes until vegetables begin to soften.
- Garlic: Add the garlic and sauté for another 1 to 2 minutes.
- Boil Broth: Add the chicken broth, bay leaves, thyme, oregano, and pepper, and bring to a boil for about 5 minutes or until vegetables are fork-tender.
- Cook Noodles: Add the egg noodles and boil for about 10 minutes, or until noodles are soft and cooked through.
- Combine: Add the chicken, parsley, and optional lemon juice, and boil for 1 to 2 minutes until chicken is warmed through.
- Season: Taste soup, add salt and pepper to taste, remove the bay leaves, and serve immediately.
Notes
Storage: Soup will keep airtight in the fridge for 5 to 7 days or in the freezer for up to 4 months. Note that as leftover soup sits, the noodles will continue to absorb the broth, so you can add a bit more broth when reheating.
