- 1/2 cup beef broth
- 1 tablespoon Dijon mustard

- 1 medium onion, diced
- 2 green bell peppers, diced
- 8 mushrooms, diced
- 4 slices provolone cheese
Instructions
- Step: Heat olive oil in a wide skillet over medium heat.
- Step: Add diced onion, green bell peppers, and mushrooms, then sauté for 8 to 10 minutes until softened and lightly caramelized. Remove from skillet and set aside.
- Step: Add ground beef to the same skillet, season with salt and pepper, and cook over medium heat until browned, breaking it apart as it cooks.
- Step: Return the sautéed vegetables to the skillet with the beef.
- Step: Stir in beef broth and Dijon mustard, then simmer uncovered for 3 to 5 minutes until slightly reduced.
- Step: Turn off the heat and lay provolone slices over the hot beef mixture.
- Step: Cover the skillet for 1 to 2 minutes to allow the cheese to melt from residual heat.
- Step: Spoon into bowls and serve immediately.
Notes
Do not overcrowd the skillet when sautéing vegetables to ensure proper browning. Simmer uncovered to naturally thicken the sauce. Melt the cheese off the heat to keep the beef juicy.
